Recipe Ingredients for German Potato Salad

64 oz Potatoes, Boiled, Cooked In Skin, Flesh
1 medium raw Onion Red
1 medium raw Onion Yellow
8 oz Pork, Cured, Bacon
1 cup Vegetable Oil, Canola
0.75 cup Vinegar, Cider

Recipe Directions for German Potato Salad

  1. boil the 3# of potatoes until tender then cool and cut into slices or chunks (or leave whole if the potatoes are smallish).

  2. Saute the bacon, remove, drain and crumble.

  3. To the bacon fat, add onions and cook until they are soft (3-5 minutes)

  4. Add vinegar and cook for 2 more minutes.

  5. Whisk in the canola oil and season to taste with salt and pepper, mustard seed, etc. whatever floats your boat.

  6. Add the dressing to the potatoes and mix well.
