This is a traditional German Cucumber Salad with a low cal twist. I substituted greek yogurt in place of sour cream and cut the sugar from 2 Tbls down to 1.

Recipe Ingredients for German Cucumber Salad (Yogurt)

2 cucumber (8-1/4") Cucumber
0.5 medium (2-1/2" dia) Onions
5 oz Greek, Non-Fat, Plain Yogurt
12 grams Sugars, Granulated
2 tbsp White Wine Vinegar, Organic
1 tsp Dill Weed, Dried
1 tsp Parsley, Dried
1 tsp Paprika

Recipe Directions for German Cucumber Salad (Yogurt)

Slice cucumbers and onion thin and spread out on paper towels, season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers. Stir yogurt, sugar, vinegar, dill and parsley together in a large bowl. Fold cucumber and onion slices into yogurt mixture. Refrigerate 8 hours or over night; garnish with paprika and serve.
