Divine cold soup--the ideal summer food! Full of flavor and crunch.

Recipe Ingredients for Georgia's Famous Gazpacho

2 quarts canned tomato juice
1 quart canned chicken broth
2 chopped fresh tomatoes
1/2 chopped fresh cucumber
1/2 chopped fresh red pepper
6 chopped green onions
2 avocados
1/2 cup vinegar
2 tbsp. olive oil
3 cloves garlic
1 tsp. fresh ground black pepper

Recipe Directions for Georgia's Famous Gazpacho

  1. In a large bowl or pitcher;

  2. Combine liquid ingredients

  3. Add chopped vegetables (onion, tomatoes, cucumber, pepper) all finely chopped

  4. Add sliced avocado (not as fine as the other vegetables)

  5. Add crushed garlic, black pepper and salt

  6. Adjust flavor to taste

  7. Chill for at least 2 hours before serving, so that the flavors are blended.

  8. Serve very cold--add ice, if necessary.
