Generic Soup Recipe

Ideal for cold days. Can reduce the calories by halving butter amount

Recipe Ingredients for Generic soup

1 kg onions
27 g butter
1 tablespoon olive oil
1 tsp salt
1 teaspoon chopped parsley
3 chicken stock cubes
1 1/2 litres water

Recipe Directions for Generic soup

  1. Peel onions and cut in half and sprinkle with salt and parsley

  2. Slice onions thinly and crush and chop garlic

  3. Meanwhie heat butter and oil in large pan until sizzling

  4. Add onions to pan and cook on high heat stirring regularly until onions brown and begin to caramalise

  5. Dissolve stock cubes in 1.5 litres boiling water.

  6. When onions brown deglaze pan with a little stock, then add rest of stock and bring back to the boil.

  7. Boil rapidly for a few minutes , skimming any froth from top.

  8. Turn down heat to simmer, patially cover pan and simmer for 30 minutes.

  9. Taste and adjust seasoning.

  10. Serve in waremed bowls
