General Tso's Chicken Recipe

Ultimate Kitchen Companion (p634). Yum. Said to use chicken thigh fillet, but used breast (cut into 3 cm cubes). Also, says to use dried citrus peel but I just used fresh zested lime peel and it was fine.

Recipe Ingredients for General Tso's Chicken

2 T rice wine
1 T cornflour
1/3 cup soy sauce, dark
3 tsp sesame oil
900 g chicken breast
1 tsp lime zest
1/2 cup peanut oil
1 tsp chili flakes
2 T fresh ginger
1 cup spring onion
2 tsp sugar
1 1/2 cups white rice

Recipe Directions for General Tso's Chicken

  1. Cut chicken into 3 cm cubes

  2. Finely chop ginger and thinly slice spring onion.

  3. Combine the Chinese rice wine, cornflour, 2 T of the soy sauce and 2 tsp sesame oil in a large, non-metallic bowl. Toss the chicken, cover and marinate in the fridge for 1 hour.

  4. Meanwhile, soak the citrus peel in warm water for 20 minutes. Remove from water and finely chop (not needed if using fresh zest.)

  5. Heat the oil in the wok over high heat. Drain the chicken from the marinade using a slotted spoon and stir-fry the chicken in batches for 2 min, or until browned and just cooked through. (Watch out for splatter)

  6. Remove from the oil with a slotted spoon and leave to drain in a colander or sieve.

  7. Drain all the oil except 1 T from the wok. Reheat the wok over high heat, then add the chili flakes and ginger.

  8. Stir-fry for 10 seconds, then return the chicken to the wok.

  9. Add the spring onion, citrus peel, sugar, remaining soy sauce and sesame oil and 1/2 tsp salt and stir-fry for a further 2-3 minutes, until well-combined and warmed through.

  10. Serve over rice, garnished with spring onion if desired.
