General Tso Chicken Recipe

A healthier version of my favorite Chinese meal. I made this gluten free by using San-J Low Sodium Tamari Sauce instead of soy sauce, but couldn't get the recipe conversions correct.

Recipe Ingredients for General Tso Chicken

2 unit+yield+from+1+lb+ready-to-cook+chicken chicken breasts
15 baby carrots
1/2 large white onion
1/2 green bell pepper
2 c. broccoli florets
1/2 c reduced sodium soy sauce
2 16% alcohol [112046] oz Sake Wine
1 tbsp. fresh ginger, grated
1 tbsp. garlic
1/2 c. water
1/4 c. Confectioners Sugar
1 tsp. cornstarch
1 c. uncooked brown rice
1 tbsp sriracha
1/2 tbsp. vegetable oil

Recipe Directions for General Tso Chicken

  1. Put brown rice in rice cooker and cook according to directions.

  2. Slice vegetables and set aside.

  3. Cut chicken into bite sized pieces.

  4. in a bowl, add minced garlic, ginger, tamari soy sauce, sake, water, and sriracha. Mix and add chicken pieces to marinate.

  5. Heat a large skillet with oil. Stir fry chicken until done, about 3-5 minutes. Remove chicken and set to side.

  6. Take remaining marinade and add confectioners sugar and cornstarch. Mix well.

  7. Stir fry vegetables for about 1 minute.

  8. Add marinade sauce. stir fry until sauce becomes thick and bubbly.

  9. Add chicken back in and stir fry to coat.

  10. Serve over steamed brown rice.
