Recipe Ingredients for General Tsao's Chicken

3/4 cup fat free chicken broth, low sodium
2 T. corn starch
2 T. sugar, sucanat
2 T. soy sauce, low sodium
1 T. vinegar
1/2 t. ground ginger
2 t. peanut oil
1 small onion, chopped
2 garlic cloves, minced
1/2 t. red pepper flakes
16 ounces chicken breasts, skinless and boneless
2 cups cooked brown rice

Recipe Directions for General Tsao's Chicken

  1. Whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger. Set aside.

  2. Heat oil in skillet over medium-high heat.

  3. Add onions, garlic and pepper and cook 2 minutes.

  4. Add chicken and cook until browned all over; about 5 minutes.

  5. Add reserved sauce and simmer until sauce thickens and chicken is cooked through; about 3 minutes.

  6. Serve chicken and sauce over rice.

  7. Yields about 1 cup of chicken and sauce and 1/2 cups of rice per serving.
