Pasta tossed with chicken and pesto. This is a good choice for leftover chicken.

Recipe Ingredients for Gemelli and Asparagus with Mint and Pine Nut Pesto

6 scallions
1/3 cup grated parmesan
1/3 cup pine nuts
1/3 cup fresh mint
3 tbs olive oil
1/2 lbs pasta
1 lb asparagus
4 tsp lemon juice
1/4 cup grated parmesan
14 oz. chicken

Recipe Directions for Gemelli and Asparagus with Mint and Pine Nut Pesto

  1. Pesto - put the scallions, parmesan, pie nuts and mint in a food processor and process until finely chopped.

  2. Pour the oil into the mixture until a paste is formed.

  3. Add salt and pepper and lemon juice and pulse one more time.

  4. Meanwhile, boil the pasta until just tender, then add the asparagus and cook about 2 minutes.

  5. Drain, and toss with the pesto and chicken, topping with the parmesan cheese.
