Gazpacho Soup Recipe

Chunky tomato soup that can be served as a main dish (chilled) or served as a sauce over pasta. Vegetarian, but adding meat is always an option. Stores well in fridge and tastes better on the second day, so make extra for leftovers.

Recipe Ingredients for Gazpacho Soup

7 1/2 cup Olive Oil and Garlic Sauce
3 1/2 cup Petite Diced Tomatoes
30 tbsp Tomato Paste
1 cup, chopped Peppers, Sweet, Red
1 medium Orange Hothouse Bell Pepper
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
12 oz Onion Red
1 cup, chopped Onions, Spring Or Scallions
2 oz Garlic
3 oz Cilantro
16 oz Tomatoes, Red, Ripe
8 oz Mushrooms, Brown, Italian, Or Crimini
8 oz Corn, Sweet, Yellow

Recipe Directions for Gazpacho Soup

  1. Prechop fresh vegetables.

  2. Combine spaghetti sauce, peeled tomatoes and tomato paste in large pot. Bring to a boil on high.

  3. Add all fresh ingredients and stir.

  4. When mixture begins to boil again, turn down heat to simmer.

  5. Flavor with Italian seasonings and add some cinnamon.

  6. Cook from 30 minutes to an hour, stirring every so often. Evaporation thickens it.

  7. Serve immediately or chill for later.
