This is a cold, vegetable soup that is very refreshing on a hot summer day. Very heart healthy, low in saturated fats.

Recipe Ingredients for Gazpacho soup

4 large tomatoes, peeled seeded
1 large cucumber, peeled seeded
1 small onion
1 green pepper, seeded
2 cloves garlic
3/4 cup tomato juice
1 slice whole wheat bread
1 tbsp lemon juice
2 tbsp olive oil
1 tsp salt
1/8 tsp black pepper

Recipe Directions for Gazpacho soup

Dice 3 tomatoes, cucumber, green pepper and onion. Set aside. In a blender or food processor, puree one tomato with the garlic cloves. Add tomato juice, beef stock base, bread; blend well and add olive oil while blender running. Pour the mixture over the diced vegetables, add the seasonings and mix well. Chill to blend flavors. Serve chilled with croutons.
