Cold soup of fresh veggies and V-8

Recipe Ingredients for Gazpacho soup

32 ounces V-8 Juice, low sodium
2 celery stalks
1/2 cup cucumber, seeded
1/2 cup red onion
14 1/2 ounces diced tomatoes, no salt added
1 tomato, medium
1 tbsp flat leaf parsley
2 cloves garlic, crushed
1 tbsp worchestershire sauce
2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
1 tbsp lime juice

Recipe Directions for Gazpacho soup

  1. chop celery, cucumber, onion, fresh tomato and parsley.

  2. Mix in large bowl with the canned tomatoes, V-8 juice, worchestershire sauce, garlic, red wine vinegar, olive oil and lime juice.

  3. Add pepper to taste.

  4. Put about half in food processor or use hand held processor and process for a few seconds. Pour back into bowl and mix well.

  5. Cover and refrigerate for a couple of hours to blend flavors.
