Originating from the Spanish region of Andalusia, over the years many new versions have emerged of this recipe, that?s traditionally made with ripe tomatoes, bell peppers, cucumbers, garlic, and bread moistened with water and blended with olive oil, vinegar, and ice water and served cold.

Recipe Ingredients for Gazpacho Soup

3 cups diced tomatoes, red ripe
2 cups diced red bell pepper
2 cups diced red onions
1/2 cup diced celery
2 cups diced cucumber
1 teaspoon minced garlic
2 cups vegetable juice, reduced sodium
1 pinch of cayenne
1 teaspoon cumin (optional)

Recipe Directions for Gazpacho Soup

  1. . Mix the diced tomato, peppers, red onions, celery and cucumber together in a bowl. Divide the mixture in half and separate into two bowls.

  2. Add garlic to one of the bowls and empty into a blender. Add vinegar to the blender and purée this mixture until smooth.

  3. Add the vegetable juice, cayenne and cumin to the blender and blend.

  4. Add the purée to the other bowl of diced vegetables.

  5. Refrigerate overnight. Next day before eating, garnish with lemon and cilantro.
