Recipe Ingredients for Gazpacho with Shrimp

3 cups diced tomatoes
2 cloves garlic, crushed
2 1/2 cups tomato juice
1 teaspoon salt
1 teaspoon cumin
1 green bell pepper, minced
1 red bell pepper, minced
1 cucumber, peeled, seeded, and minced
2 scallions, minced
2 tablespoons olive oil
2 slices whole wheat bread
1/2 red onion, minced
12 oz. shrimp, cooked

Recipe Directions for Gazpacho with Shrimp

  1. cut crusts off bread and dice

  2. combine bread in the blender with garlic, olive oil, salt, cumin, and 1 cup of tomato juice

  3. mince the veggies in a food processor and combine in a large bowl with the bread mixture, remainder of tomato juice, and diced tomatoes

  4. add shrimp and chill until very cold

  5. when serving, garnish with croutons, parsley, and/or hot sauce
