Recipe Ingredients for Gazpacho

604 g tomato
123 g celery stalk
135 g onion
215 g red bell pepper
207 g cucumber
25 g garlic
58 g bread
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 teaspoons salt
1/2 teaspoon Tabasco sauce
2 tablespoons basil
1 liter water

Recipe Directions for Gazpacho

  1. Heat olive oil and saute garlic. Add chopped tomatoes, 75% each of finely chopped celery, onion, bell pepper, seeded cucumber and balsamic vinegar. Saute on high heat for a few minutes.

  2. Crumble bread in a food processor and add it along with 750ml water to the vegetables. Bring to a boil and take off heat immediately.

  3. Partially puree the soup but not too much. Add salt and Tabasco sauce to taste. Chill the Gazpacho for at least 6 hours.

  4. Before serving add the remaining chopped celery, onion, bell pepper, cucumber and basil into the soup.

  5. If the soup is too thick add 250ml iced water, adjust seasoning and serve.
