Refreshing tomato soup with fresh fruit and vegetables.

Recipe Ingredients for Gazpacho

2 garlic cloves
1 tsp. salt
1 large cucumber, chopped
1 yellow pepper, chopped
2 celery stalks, chopped
4 ripe tomatoes, chopped
1 red onion, chopped
4 cups fresh tomato juice
2 tsp. cumin seeds
1 tsp. chili powder
1 avocado, pitted
2 7/10 oz. lime juice (2 limes, juiced)

Recipe Directions for Gazpacho

puree garlic. Put cucumber, bell pepper, celery, tomatoes, and onion in a bowl, add the garlic and mix. Put half of this mix in a food processor and pulse until slightly chunky. Pour this processed mix in another bowl. Puree the rest of the mix until smooth then add to the bowl with the rest of the tomato mix. Mix in tomato juice, cumin,chili powder. Add salt and pepper to taste. Chill for several hours until very cold (could be put in the freezer for about half an hour to chill). Cut avocados into small cubes and then cover in lime juice until well coated. Stir avocado cubes into gazpacho. Done!
