This is how they make gazpacho when you go to spain. If you want to be fancy chill the plates before serving, and drizzle a little EVOO on the soup after its poured in the bowl

Recipe Ingredients for Gazpacho

4 cups chopped tomatoes
1 cucumber
1 cup chopped red pepper
1/2 cup chopped red onion
1 clove garlic
1 tsp salt
1 tsp cumin
2 tbs red wine vinegar
1/3 cup extra virgin olive oil

Recipe Directions for Gazpacho

  1. put all ingredients except olive oil in a blender. Blend for a minute, then slowly pour in the olive oil.

  2. I don't really measure but these are all of the ingredients that I use. Adjust this however you like.
