Recipe Ingredients for Gazpacho

2 cup tomato, peled, seeded and chopped
2 cup cucumber, pelled, seeded and chopped
1/2 small onion, chopped
1/2 red pepper
1 garlic clove
3/4 cup water
2 cup tomato juice or vegetable juice
3 tbsp lemon juice
4 tbsp olive oil
1 dash salt, sea salt
1 cup tomato, diced
1 cup cucumber, diced
1 cup green pepper, diced

Recipe Directions for Gazpacho

  1. In a mixer, liquified the first 2 cups of tomatoes, the first 2 cups of cucumbers, the onion, the red pepper and the garlic. Add the tomato juice.

  2. Put that in a large bowl, add the water, the lemon juice, oil, salt and mix well. Cover and freeze for 1 hour or put in refrigerator for 5 hours.

  3. In your serving bowl, put some of the diced tomatoes, cucumbers and green pepper. Pour the Gazpacho on top of it.
