tangy, cold, summer soup. vegan and completely delicious

Recipe Ingredients for gazpacho

1/2 medium onion, diced
3 cloves garlic, minced
3/4 medium cucumber, grated
21 ounces diced tomatoes
3/4 medium green bell pepper
4 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
5 tbsp lemon juice
3 tbsp tomato paste
3 cups tomato juice
1/2 tsp black pepper

Recipe Directions for gazpacho

blend everything together, then chill for at least 6 hours. keeps for 4-5 days in the fridge.
