Great summer recipe! Each serving is 1.25 cups.

Recipe Ingredients for Gazpacho

2 1/2 cups cucumber, seedless, 1" dice
1 red pepper, 1" diced
1/2 cup onion, diced
3 garlic cloves
3 tomatoes, cored and diced
46 ounces V8
1/4 cup red wine vinegar
2 tbsp lime juice
1 jalepeno pepper, seeded, diced
1/2 cup parsley, chopped
1/2 tsp sea salt

Recipe Directions for Gazpacho

Add all ingredients to a large bowl. Puree with a hand-held blender. Chill 2 hours and serve.
