I adapted this recipe from the Moosewood Cookbook. It originally called for 4 cups of tomato juice, but I wanted to go for something fresher. Gazpacho is a great summertime meal, no cooking!

Recipe Ingredients for Gazpacho

6 tomatoes, pureed
1/2 cup onion, finely minced
1 clove garlic, minced
1 bell pepper, minced
1 tsp honey
1 cucumber, peeled, seeded and minced
2 tbsp lemon juice
1 tbsp lime juice
2 tbs balsamic vinegar
1 tsp salt
1 tsp tarragon
1 tsp basil
1/2 tsp ground cumin
1/4 cup parsley, minced
2 tbsp olive oil
2 cups tomatoes, diced

Recipe Directions for Gazpacho

  1. Combine all ingredients.

  2. Optional: puree all or some

  3. Chill until very cold
