Gazpacho is a delicious cold soup which makes a great starter or summertime meal. Not only is it easy to make, but it is also a quick, healthy, cost-effective option.

Recipe Ingredients for gazpacho

1 chopped clove garlic
1/2 small chopped red onion
1/2 red pepper, deseeded and chopped
1/2 green pepper, deseeded and chopped
1 cup cucumber, peeled deseeded and chopped
3 cups tomato juice
1 tablespoon extra virgin olive oil
1 teaspoon white wine vinegar
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper

Recipe Directions for gazpacho

  1. Place all of the ingredients in a food processor or blender and process until smooth. Chill in the fridge until you're ready to serve.

  2. Tip: Add a few drops of Tabasco sauce for more flavour
