Classic Castilian Gazpacho recipe perfect to start any summer meal or just to sip as an afternoon snack. It's always better the day after you make it.

Recipe Ingredients for Gazpacho

1000 g Tomatoes, Red, Ripe
1 medium cucumber
1 red pepper
1 carrot
1 onion
2 clove garlic
1 tbsp olive oil
2 tbsp Sherry Vinegar
2 slice white bread

Recipe Directions for Gazpacho

  1. Place stale bread, vinegar, oil and garlic in a bowl and let soak while you dice the other ingredients.

  2. Peel, dice and add the other ingredients one by one so that the bread soaks up the oil, vinegar and veggie juices.

  3. Blend all together until smooth. If too thick (should be just thin enough to drink out of a glass) you can add a little cold water.

  4. Add sea salt, more vinegar and / or tabasco to taste and blend again.

  5. It's best if you can chill it in the fridge a few hours after you make it.
