Recipe Ingredients for Gazpacho with Pesto & Shrimp

1 lb cooked shrimp, sliced lengthwise
1 1/2 tsp lemon juice
8 Roma tomatoes, halved & seeded
1 c basil leaves
1 clove garlic, minced
1/2 tsp salt
2 tbs balsamic vinegar
1 tsp sugar
1 cucumber, seeded
1 bell pepper, yellow, seeded & cut into 6 sections
5 scallions, white parts & 2 inches of green
1/3 red onion
3 tbs chives

Recipe Directions for Gazpacho with Pesto & Shrimp

  1. Toss shrimp with lemon juice, set aside.

  2. Cut each tomato half in half. Working in batches, pulse tomatoes in food processor until diced. Transfer to large bowl and set aside.

  3. In food processor, combine basil, garlic, salt, sugar, vinegar, and 4 tbs water - process until smooth. Add to tomatoes; set aside.

  4. Score cucumber with a fork, cut in half lengthwise and crosswise. Scoop out seeds with a spoon. Place in food processor and pulse until diced. Transfer to a medium bowl.

  5. Repeat food processor dicing with pepper, scallion & red onions; combine diced vegetables with cucumbers. Add chives and stir.

  6. Combine cucumber and tomato mixtures and mix well.

  7. Add shrimp. Garnish with lemon zest (optional) and serve.
