Removed oil. Added red wine vinegar. Used low salt and spicy V8.

Recipe Ingredients for Gazpacho, Modified: lower fat, lower salt

6 tomatoes, medium
1/2 cup celery
2 cucumber
1/2 cup yellow bell pepper
1/4 cup green onion
1 garlic clove
2 tsp parsley
1/2 tsp salt
8 tsp red wine vinegar
24 oz low sodium V8
8 oz spicy hot V8
1/4 cup lemon juice

Recipe Directions for Gazpacho, Modified: lower fat, lower salt

  1. Chop all solid ingredients into chunky bits and place in a large bowl.

  2. Pour all liquid ingredients into the bowl over the chunks.

  3. Mix thoroughly.

  4. *Add worchestershire sauce to taste (about 1/2 tsp) or even Liquid Smoke (3 "shakes")

  5. Refrigerate 2 or more hours, or overnight to allow the flavors to meld.
