A cool, refreshing soup that takes very little time to prepare.

Recipe Ingredients for Gazpacho - Low-Carb No Cook

177 2 small cucumber
355 3 roma tomato
17 1 pepper red hot cherry pepper
150 1 pepper green bell pepper
59 1/2 onioin onion
1/4 tsp minced garlic
2 tbsp grapeseed oil
8 oz low sodium vegetable juice
1/4 cup apple cider vinegar
8 grams fresh oregano
1 1/2 cups water
1 tsp black pepper, coarse ground

Recipe Directions for Gazpacho - Low-Carb No Cook

  1. Coarsely chop vegetables.

  2. Divide all ingredients into two batches.

  3. Blend each half of ingredients in blender for 2 minutes.

  4. Combine both halves in a large bowl.

  5. Chill for at least 1 hour.

  6. Serve with a dollop of sour cream, goat cheese, or hummus.
