A light refreshing cold soup to eat for lunch or dinner! Best made with veggies from your own garden. Make sure the tomatoes are REALLY ripe.

Recipe Ingredients for Gazpacho by KC

25 oz tomatoes, very ripe, about 5 medium size
1 large red bell pepper, about 3.5-4" long
602 g cucumbers , two 8" long, thinner=crisper
1/4 cup extra virgin olive oil, sevillano or other grassy type
1/4 cup red wine vinegar
1 tsp salt
1 tsp black pepper
1/2 tsp red pepper flakes

Recipe Directions for Gazpacho by KC

  1. Cut tomatoes in chunks and blend in blender.

  2. Seed peppers and cut in chunks. Blend.

  3. Peel cukes, slice in half lengthwise. Use a spoon to remove seeds. Cut in chunks and blend.

  4. Add oil, vinegar, and spices. Blend.

  5. Chill in fridge for at least 2.5 hours. The colder the better. Good for two days.
