From the Veganomicon cookbook. Like gazpacho, but with beets and without garlic.

Recipe Ingredients for Gazborscht

3 cups beets, peeled and shredded
5 cups water
2 tbsp tomato paste
1 tsp salt
1 seedless cucumber, chopped
3 medium tomatoes, chopped
1 small white onion, chopped
1 slice French bread
2 tbsp olive oil
1/4 cup lemon juice
1/2 cup cilantro
1 avocado, pitted

Recipe Directions for Gazborscht

  1. Place the shredded beets in a soup pot and add the water, tomato paste, and salt. Partially cover the pot, leaving a little room for steam to escape. Bring the water to a boil and then simmer for 5 minutes; the shredded beets should be tender but have a little crunch. Remove from heat and let cool completely. (My note: Impatient? Putting the soup pot in an ice bath in the sink with salt in the ice water works wonders.)

  2. In a food processor fitted with a metal blade, place half the cucumber, half the tomatoes, and half the onion. Add 1 cup of the cooled beets and their liquid, and the bread, olive oil, and lemon juice. Process for about 15 seconds; the mixture should be chunky but you shouldn't detect the bread.

  3. Add the rest of the tomato, cucumber, and onion, plus the cilantro, to the processor. (My note: you may have to do it in batches unless you have a really, really big processor.) Pulse about ten times so that the soup is still chunky. Add this mixture to the rest of the cooled beets. Add freshly ground salt and pepper to taste.

  4. Pour into a container, cover, and chill for at least 30 minutes or until ready to serve. (My note: Um...we were starving and so skipped the cooling part. It's nice, but not entirely necessary.) Garnish each bowl with thin slices of avocado.
