GATKA is a poormans diet in India made of corn (mokka jonna) this is called polenta,grits from wikik " Polenta is made with ground yellow or white cornmeal, (ground maize). It can be ground coarsely or finely depending on the region and the texture desired. As it is known today, polenta derives from earlier forms of grain mush (known as puls or pulmentum in Latin or more commonly as gruel or porridge) commonly eaten in Roman times and after. Early forms of polenta were made with such starches as the grain farro and chestnut flour, both of which are still used in small quantity today. When boiled, polenta has a smooth creamy texture due to the presence of starch molecules"

Recipe Ingredients for gatka veggies

2 tsp olive oil
1 onion, medium, chopped
1 red bell peppers (med), chopped
2 cup vegetable broth, low sodium
2 cup water
1 cup cornmeal
14 oz firm tofu, drained and cut into 1/2-inch cubes
8 oz Greens, collard, frozen, chopped, 10oz package, or turnip or mustard greens
1/4 cup Cheese, parmesan, fresh, grated
1 tbsp Margarine, 80% fat, tub

Recipe Directions for gatka veggies

  1. Place a large nonstick saucepan over medium heat, and pour the oil into the saucepan, swirling to coat the bottom.

  2. Cook the onion and bell pepper for 3 to 4 minutes, or until tender-crisp, stirring occasionally.

  3. Stir in the broth, water, and bacon bits, and bring to a boil over high heat, stirring occasionally.

  4. Gradually add the cornmeal to the pan, stirring constantly.

  5. Reduce the heat and simmer for 15 to 20 minutes, or until the vegetables are tender and the cornmeal mixture is soft and creamy, stirring occasionally.

  6. Stir in the tofu and greens, and cook over medium-high heat for 6 to 8 minutes, or until the greens are tender, stirring occasionally.

  7. Stir in the Parmesan cheese and margarine, and cook for 1 to 2 minutes, or until the cheese is melted, stirring occasionally.
