French Version of the classic "pound cake", but this is much lighter than it's American and forebears.

Recipe Ingredients for Gateau au Quatre-quarts

2 large eggs
1/4 lb unsalted butter
10 tbsp sugar
1 3/4 cups cake flour
1 tbsp baking powder
1 cup powdered sugar

Recipe Directions for Gateau au Quatre-quarts

  1. Sift the flour together with the baking powder and preheat the oven to 400 degrees.

  2. Cream eggs and sugar together until smooth.

  3. Add the eggs, one at the time, allowing enough time between each addition for them to be very well incorporated. At the end of this process, the mixture should be a very pale yellow and very light and airy.

  4. Add the flour in thirds, allowing enough time between each addition for it to be completely mixed in.

  5. Pour the batter into a greased cake pan of your choosing, but one deep enough so that the batter does not come up to the rim (it will rise considerably during baking),

  6. Bake for approximately 30 minutes and let cool at least 10 minutes before unmoulding.

  7. Combine the powdered sugar with a teaspoon of lemon juice and enough water to reach spreading consistency.

  8. Spread this over the cooled cake, and allow it to set.

  9. Serve with coffee or tea, and fresh fruit.
