Garlicky White Bean Soup Recipe

Bean soup with lots of garlic and a bit of rosemary. Adapted from Soup Makes the Meal by Ken Haedrich. Makes small, cup-size servings.

Recipe Ingredients for Garlicky White Bean Soup

6 clove Garlic
1 small Onions
2 tbsp. Olive Oil
3 small (5-1/2" long) Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 1/2 cup Beans, Great Northern, Mature Seeds
1/2 tsp Rosemary, Dried
4 cup (8 fl oz) Water

Recipe Directions for Garlicky White Bean Soup

  1. Clean dry beans and cover with water. Bring to a boil, boil 1 minute, then cover and let sit off heat for 1 hour.

  2. Drain beans, cover with 4 c. water and bring to a boil. Lower heat to simmer and cook for about 1 hour or until tender.

  3. Heat olive oil over low heat; add onion, garlic, celery, carrot, and rosemary. Saute over low heat for about 20 minutes.

  4. Add tomato; cook over low heat another 10-15 minutes.

  5. When beans are soft, add beans and their cooking water. Season with salt and pepper.

  6. Transfer about half the soup to blender, puree briefly and return soup to pot.
