Recipe Ingredients for Garlicky Potato and Baby Spinach Gratin

2 cups heavy cream
1/2 cup parmesan cheese
2 teaspoons salt
1/2 teaspoon ground pepper
1/4 teaspoon nutmeg
1 tablespoons butter
10 ounces baby spinach
5 garlic cloves, minced
2 1/2 pounds potato, peeled, sliced to 1/16 thick

Recipe Directions for Garlicky Potato and Baby Spinach Gratin

  1. Preheat oven to 424. Spray Pam in a 11x17 baking dish (or 10, 8 ounce ramekins). In a 4-cup measuring cup with a spout, mix together cream, parmesan cheese, salt, pepper and nutmeg.

  2. Place a medium skillet over medium-high heat. Add butter and melt. Add the baby spinach and minced garlic to pan, toss for 1 minute.

  3. Evenly layer the potatoes in the bottom of bakign dish. Distribute the spinach in an even layer on top of the potatoes. Whisk the cream mixture with a fork, and then pour it evenly on top of the spinach and potatoes.

  4. Give the dish a shake to distribute the cream filling. Bake for 24-30 minutes until the cream filling is bubbling, and the potatoes are tender.

  5. Let cool 5 minutes before serving.
