Recipe Ingredients for Garlicky Mashed Fauxtatoes

1 cauliflower head
1 tbs. organic butter
1 small red or yellow onion
1 cloves of garlic, to taste

Recipe Directions for Garlicky Mashed Fauxtatoes

  1. 1. Wash the cauliflower, peeling away the external leaves. Chop the stem so the bottom of the head is steady and flat. Place in a large pot with a few inches of water in it.

  2. 2. Cover the pot and turn the heat up to high. Steam the cauliflower until tender and soft, usually about 10 minutes.

  3. 3. As the cauliflower steams, chop your onion and sauté it in the healthy fat of your choice: organic butter, olive oil, or coconut oil.

  4. 4. Add the steamed cauliflower to the onions and sauté together for about 8 minutes.

  5. 5. Place the cauliflower and onion mixture in a food processor or blender. Add about another Tbs. of butter and pulse until blended.

  6. 6. Mince the garlic and sauté it in your frying pan, using more of the healthy fat of your choice. Cook until brown, but be careful not to burn it.

  7. 7. Add garlic to the onion/cauliflower blend and stir. Serve warm.
