Original recipe by Anita Bukowski, found on www.allrecipes.com. I used 2 tsp dried parsley in place of the original's 2 Tbsp fresh.

Recipe Ingredients for Garlicky Baked Butternut Squash

2 tsp Parsley, Dried
2 tbsp extra virgin olive oil
2 clove Garlic
1 tsp Salt, Table
1/2 tsp Pepper, Black
56 oz Squash, Winter, Butternut
0.33 cup Parmesan, Grated Cheese

Recipe Directions for Garlicky Baked Butternut Squash

  1. Mince garlic. Peel and de-seed squash and cut into 1" cubes.

  2. In a large bowl, combine the parsley, oil, garlic, salt, and pepper. Add squash and toss to coat.

  3. Transfer to an ungreased shallow 2 qt baking dish. Bake, uncovered, at 400 degress F for 50-55 min or until squash is just tender. Sprinkle the cheese over the squash during the last 15 min of cooking.
