Garlicky Baked Butternut Squash and Arugula

Recipe Ingredients for Garlicky Baked Butternut Squash and Arugula

2 tablespoons fresh basil
2 tablespoons extra virgin olive oil
3 garlic cloves
1 teaspoon salt
1/2 teaspoon pepper
3 1/2 lb butternut squash
9 cups arugula
12 tablespoons lemon juice
12 dashes salt

Recipe Directions for Garlicky Baked Butternut Squash and Arugula

  1. In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.

  2. Transfer to an ungreased shallow 2-qt. baking dish. Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender.

  3. Serve squash over 3/4 cup arugula, dressed with 1 TB lemon juice and a dash of salt
