Garlic Walnut Broccoli over Spaghetti Squash - a healthier twist on a great classic.

Recipe Ingredients for Garlic Walnut Broccoli over Spaghetti Squash

320 g spaghetti squash
240 g broccoli
1 tbsp garlic
2 1/2 tbsp olive oil
1 tsp salt
60 g walnuts
1 tsp lemon juice
1/2 tsp pepper

Recipe Directions for Garlic Walnut Broccoli over Spaghetti Squash

  1. Put half of the olive oil in pan on med-hi w/ garlic.

  2. Cut up 1 head of fresh broccoli into small to medium chunks ( I cut on the twig lines). When garlic is lightly browned, put in broccoli. Let cook for a few minutes until softened. Add broken walnuts. Let a few minutes.

  3. Add water lemon juice salt an pepper. Cook a little longer.

  4. Add spaghetti squash and cook for 1 more minute.
