Fantastic gravy, rich and multilayered flavors, and so pretty with the red pepper, orange carrot and green fresh herbs of parsley and basil.

Recipe Ingredients for Garlic Studded Pot Roast

4 pounds beef, top or bottom round
6 garlic cloves, slivered
1 tablespoon olive oil
1 onion
1 red pepper
2 carrots, shredded
1/2 cup basil
1/2 cup parsley
1/2 cup red wine vinegar
1 cup red wine
3 cups beef broth
1 tablespoon tomato paste
1/3 cup flour

Recipe Directions for Garlic Studded Pot Roast

  1. Stud roast with garlic by slitting small cuts into side and pushing in the slivered cloves.

  2. Heat oil in large pot and brown roast on all sides. Add onion, cook til soft. Add red wine, vinegar, parsley, basil, carrot, red pepper and tomato paste. Simmer for two to two and half hours, or until meat is tender. Remove meat.

  3. Mix 1/3 cup flour with 2/3 cup cold water til smooth. Add to gravy and cook until slightly thickened. Adjust seasonings with salt and black pepper.
