Loaded with veggies and a small amount of noodles..... no meat.

Recipe Ingredients for Garlic, Spinach and Tomato Pasta

1 tbsp olive oil
1 garlic clove, minced
1 cup mushrooms
1/2 cup spinach
2 tbsp onion, minced
1/2 squash
1 oz mozzarella
2 oz spaghetti
1/2 cup tomatoes, diced

Recipe Directions for Garlic, Spinach and Tomato Pasta

  1. Boil noodles. In separate pan, heat oil and garlic. Add squash and onions. Sauté until slightly tender. Add mushrooms, drain noodles. Transfer squash/onion/mushroom contents into larger noodle pot. Add tomatoes and salt and pepper to taste. Quickly add spinach, turning until spinach is dark and soft.

  2. May add/ replace with scallions, asparagus, zucchini, eggplant, broccoli, snow peas, chicken, fish, and steak. May reduce/ omit cheese, half noodles, half oil.
