Mashed golden potatoes with garlic and fresh spinach

Recipe Ingredients for Garlic & Spinach Mashed Potatoes

4 cups potatoes, diced
4 cups fresh spinach
1/3 cup sour cream
3 tbs butter
1/2 tsp salt
5 cloves garlic

Recipe Directions for Garlic & Spinach Mashed Potatoes

  1. Clean, dice and boil potatoes in salted water until tender.

  2. Drain potatoes and melt butter in hot pot.

  3. Mince or press garlic and cook in the butter for about a minute.

  4. Add the fresh spinach and salt to the pot and wilt the spinach down.

  5. Remove from heat

  6. Return potatoes to pot with spinach etc., add sour cream and mash or whip.
