I found this on http://www.101cookbooks.com/archives/richard-olneys-garlic-soup-recipe.html. Though not abundant in nutrients, this soup is easy to make and full of real foods. Its also a great way to incorporate the benefits of olive oil and garlic into your diet. The soup has a mild garlic flavor.

Recipe Ingredients for Garlic Soup

12 cloves Garlic
1 1/2 oz Parmesan, Grated Cheese
1/4 cup Olive Oil
1 medium Egg, Whole
1/4 tsp Sea Salt
1 tsp, crumbled Bay Leaf
1 teaspoon Thyme
1/2 tablespoon Sage

Recipe Directions for Garlic Soup

  1. Peel, crush and chop garlic.

  2. Add to pot with 4 cups of water, salt, thyme, 2 sage leafs, and 1 bay leaf.

  3. Bring to a boil and simmer for 40 minutes.

  4. Cream the egg, 2 egg yolks, and cheese with some of the broth. Add olive oil. Add pepper to taste.

  5. Slowly add to the pot and stir continuously on medium heat until smooth.
