Recipe Ingredients for garlic scallop pasta

16 oz scallops
8 oz dry whole wheat pasta
1/4 cup olive oil
1 cup peas
2 tsp minced garlic
2 tbs parsley
2 tbs rice flour
2 tbs lemon juice
1/2 tsp salt

Recipe Directions for garlic scallop pasta

  1. Cook gluten-free pasta according to directions. drain.

  2. heat oil and garlic in pan.

  3. coat scallops with flour. Add to pan and cook. until done.

  4. Add lemon juice and salt.

  5. Add pasta and peas and cook on low heat about five minutes. Add parsley before serving.

  6. Can add 1 tbs parmesan cheese if desired.
