This is a combination of a couple recipes because I could never find exactly the right one. (see below for ingredient notes)

Recipe Ingredients for Garlic Roasted Linguine with Willd Mushrooms

12 oz linguine
1 oz dried porcini mushrooms
2 cups boiling water
2 teaspoons olive oil
2 leeks, chopped
2 oz enoki mushrooms
2 oz portabello mushrooms
2 oz oyster mushrooms
2 oz shiitake mushrooms
2 tbsp sage, fresh chopped (or 1 tsp dried)
3 tbsp flour
2 cup frozen peas
3 tbsp fat free half and half
1/4 cup fresh parsley, chopped
4 oz romano cheese, fresh shredded
1 cup low sodium beef broth

Recipe Directions for Garlic Roasted Linguine with Willd Mushrooms

  1. INGREDIENT NOTES: I used Roasted Garlic Linguine by Al Dente. Only takes about 3-5 minutes to cook - delicious. Also you can use any combination of mushrooms that you want - I just happened to find a "gourmet blend" - Shiitake, Baby Portabello, and Oyster at Meijers. Then I found a separate package of Enoki mushrooms.

  2. Soak dried Porcini mushrooms in 2 cups of bowling water for at least 15 minutes. Drain water off of mushrooms (and reserve) by straining through a paper towel in the bottom of your collander.

  3. While Porcini mushrooms are soaking - chop your leeks, sage and parsley - set aside in separate small bowls.

  4. Cut up all mushrooms into bite size pieces (they will cook down).

  5. Heat olive oil in a large skillet over med-hi heat. Add leeks and cook about 2 minutes. Add porcini and shittake mushrooms and cook 3-5 minutes or until soft(these take a bit longer to cook than the other kinds). Add the rest of the mushrooms and cook until softened. Sprinkle flour over mushrooms as they are cooking. Add peas, sage and reserved porcini soaking liquid. Bring to a simmer. Add half and half - continue stirring until liquids are thickened. Take skillet off from heat and set aside.

  6. Bring a pot of water to a boil; add linguine and cook accordin to package directions or until desired doneness. Drain pasta; stir into mushroom mixture. The noodles are going to soak up any liquids that are left. Slowly add and stir beef broth in with noodles and mushrooms until desired consistancy is acheived. ** My recipe came out a little dry because the noodles soaked up my sauce - I then added the beef broth too "loosen" up the noodles and it was much better.
