Recipe Ingredients for Garlic Risotto w/Roasted Asparagus

5 cups low sodium vegetable broth
1 tbsp extra virgin olive oil
2 tbsp shallots
1 small onion
2 cups rice
1/2 cup dry white wine
3 garlic cloves
2 tbsp parmesan cheese
16 spears asparagus
1 tbsp balsamic vinegar

Recipe Directions for Garlic Risotto w/Roasted Asparagus

  1. Risotto

  2. 1) Heat a little olive oil in a saucepan over med. heat. Then add the garlic, shallots and onion. Saute until light golden.

  3. 2) Add rice and stir for about a minute. Then add wine and stir untl the wine evaporates.

  4. 2) Add broth and cook until the liquid is absorbed, stirring frequently.

  5. 3) Continue adding more broth, usually in 1/2 cupfuls, until rice is tender and creamy [I usually try a piece], and ALL the broth is absorbed.

  6. * You could also add mushrooms and carrots or peas! OH MY!*

  7. Asparagus

  8. 1) Preheat oven to 450F.

  9. 2) PLace asparagus in baking dish --- drizzle lightly with olive oil --- then sprinkle garlic over them.

  10. 2)Bake asparagus until tender -- about 15 min.

  11. 3) Season with salt and pepper!!!
