Recipe Ingredients for Garlic Parslied Potatoes

3 medium potatoes
2 cloves garlic
1/4 cup soy milk
1 ounce butter
1/4 cup frozen spinach
1 salt
1 pepper
1 ounce dry parsley

Recipe Directions for Garlic Parslied Potatoes

  1. Wash potatoes, do not peel

  2. cut into 1 inch pieces

  3. boil until tender

  4. drain almost all water, leave a bit in the pot

  5. add the rest of the ingredients

  6. mash with potato masher or better yet, use an electric hand mixer for fluffiness.
