This is a quick and easy version of mashed potatoes that is so full of flavor. Want to cut the fat? Using skim milk only works well too!

Recipe Ingredients for Garlic Parmesan Mashed Potatoes

3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin
3 tbsp Extra Virgin Olive Oil
3 clove Garlic
3 tbsp Heavy Cream
3 oz Skim Milk Fat Free
0.5 cup Parmesan, Grated Cheese
0.25 tsp Pepper, Black
1 pat (1" sq, 1/3" high) Butter
0.5 tsp Kosher Salt

Recipe Directions for Garlic Parmesan Mashed Potatoes

  1. Leaving the skins on, cut the potatoes into evenly sized pieces. Add to a pot of cold water, and then bring the water to a boil. The potatoes are done when they easily slide off a fork.

  2. Drain the potatoes and set aside.

  3. In that same pot, add 2 Tbsp of the olive oil and the pat of butter, and heat over medium. Add the garlic and sauteed until turning light gold. Add the potatoes, stir to mix well, and then turn off the heat.

  4. Using a hand mixer, smash the potatoes with the blades. Then add the olive oil, milk, cream, salt, and pepper a little bit at a time, whipping the potatoes. When to the smoothness you desire, add the parmesan and mix until it is melted into the potatoes.

  5. If need be, re-heat the potatoes over medium-low heat until ready to serve, adding ONLY more skim milk as needed to moisten.
