Macrobiotic alternative to mashed potatoes. Makes about eight 1/2 cup servings.

Recipe Ingredients for Garlic Onion Mashed

7 cups cauliflower, equiv. to one head of cauliflower
5 green onions
3 cloves garlic

Recipe Directions for Garlic Onion Mashed

  1. Cut up cauliflower into bite sized pieces.

  2. Steam until fork tender.

  3. Mince green onions (use white part only, no leaves) and garlic together.

  4. Mash all ingredients into bowl and add salt and pepper to taste.
