Recipe Ingredients for Garlic mushroom soufflé

225 grams Mushrooms, Brown, Italian, Or Crimini
35 grams Butter
3 tbsp Parmesan, Grated Cheese
2 cloves, raw Garlic
50 grams Plain All Purpose Flour
30 grams Milk
1 teaspoon Dijon Mustard
4 large egg Eggland's Best Egg
4 grams olive oil
1 gram sunflower oil

Recipe Directions for Garlic mushroom soufflé

  1. Grease a medium tall soufflé dish with some of the butter, then line the dish with the parmesan.

  2. Heat the mushrooms and garlic and fry for 3 minutes, stirring. Leave to cool.

  3. Melt the remaining butter in a saucepan, stir in the flour and cook for 1 minute. Gradually mix in the milk and bring to the boil, stirring until thickened and smooth. Stir in the mustard, egg yolks and some salt and pepper. Cover and leave to cool.

  4. Whisk the egg whites into stiff, moist-looking peaks. Fold a large spoonful of egg whites into the cooled sauce to loosen the mixture, then fold in the cooked mushrooms. Gently fold in the remaining egg whites.

  5. Pour the mixture into the prepared soufflé dish and bake in a preheated oven, 190 degrees C (th.5), for 25-30 minutes until the soufflé is well risen, the top is browned and there is a slight wobble to the centre.

  6. Spoon the soufflé on to plates. Serve with crispy bacon and griddled tomatoes.
