Recipe Ingredients for Garlic and Mint Chicken Breasts

24 oz Fresh Boneless Skinless Chicken Breasts
4 oz Mint
1 tbsp Lemon Juice, Canned Or Bottled
1 tbsp Olive Oil
1 tbsp Soy Sauce
4 clove Garlic
1 tsp Chili Powder

Recipe Directions for Garlic and Mint Chicken Breasts

  1. Place chicken in a resealable plastic bag set in a shallow dish; set aside.

  2. For marinade: combine all ingredients except the chicken in a blender, and process until smooth. Pour over chicken, seal bag. Marinate in the refrigerator for at least four hours.

  3. Drain chicken, discarding marinade. Grill on rack of an uncovered grill directly over medium heat 12 to 15 minutes or until no longer pink in the middle (170F). Can be served on top of couscous or rice.
