We always keep the skins on - more flavor and nutrients, and don't mind leaving a few lumps in them - don't like them too smooth... they are yummy!

Recipe Ingredients for Garlic Mashed Potatoes with Skins

6 small russet potatoes
1/4 c low-fat sour cream
1/8 c 2% milk
2 T Omega-3 with Extra Virgin Olive Oil Light Buttery Spread
4 cloves garlic

Recipe Directions for Garlic Mashed Potatoes with Skins

  1. Cut potatoes into bite-size chunks, keeping skins on.

  2. Boil potatoes and cloves of garlic together until potatoes are fork-soft but not mushy.

  3. Drain and put in a bowl. Mash potatoes and garlic with sour cream, milk and spread to desired consistency.
