Delicious mashed potatoes with roasted garlic

Recipe Ingredients for Garlic Mashed Potatoes

1 garlic cloves, complete head
1 T olive oil
2 pounds russet potatoes, peeled and diced
1/4 c butter
1/2 c milk
1 salt and pepper to taste

Recipe Directions for Garlic Mashed Potatoes

  1. Cut off top ~ 1/2" of garlic head. Place on a square of aluminum foil and pour olive oil over. Place in 400 degree oven and roast for 45 minutes to an hour until tender.

  2. Boil potatoes in a large pot until tender in salted water. Drain.

  3. Place potatoes in mixing bowl along with butter abd milk. Cut garlic in half and squeese roasted heads into bowl.

  4. Mix until smooth. Add salt and pepper to taste.
