A modification on the wonderful garlic mashed recipe by "twelti." This one is a little lighter on the flavor and adds cauliflower for "hidden veggies.

Recipe Ingredients for Garlic Mashed Potatoes & Cauliflower

2 c. potatoes, peeled, diced
1 c. cauliflower florets, chopped
3/4 c. skim milk
1 1/2 tbsp margarine
1 tbsp garlic, minced
1/2 tsp. salt

Recipe Directions for Garlic Mashed Potatoes & Cauliflower

  1. Peel & dice the potatoes and chop the cauliflower into similar-sized pieces.

  2. Boil veggies until fork-tender but not falling apart; drain & set aside in a separate bowl.

  3. Add margarine and garlic to pan and saute until garlic is fragrant.

  4. Add vegetables, milk, and salt. Mash and let simmer 5 minutes.
